Taste Profile Where it's from
A very pleasant Sauvignon bouquet and very different from up-front NZ wines that almost jump out of the glass at you. It is gentler and more restrained in style and the wine fuller bodied and distinguished, but rounder and with more mature fruitiness and a hint of peach flavour. About the Wine
Chile produces remarkably good wines at amazingly good prices from its privileged position between the Andes and the Pacific, where winemakers are blessed with some of the most desirable conditions on earth: exceptional soils, ideal temperatures, and intense sunlight.
At Viña Edmara there is very little use of pesticide and the philosophy of the winemakers is: minimal interference. The grapes for are sourced from two main areas: the rich Central Valley area and the cooler Coastal Area.
The vines are grown in loamy clay soils and the grapes were handpicked, destemmed, crushed and quickly chilled to 10 degrees C in order to retain the freshness and flavours and were then fermented in stainless steel tanks.
Goes well with
With notes of citrus fruits (lemon zest and a touch of lime) this is a great accompaniment to all types of fish dishes. Try it with simply grilled prawns or roasted/pan-fried turbot and cod.
The creamy texture also works very well with chicken dishes in creamy sauces, and will be a lovely match with spaghetti carbonara.
