The river Loire is the longest in France rising in the Massif Central with the estuary near Nantes and Touraine is half way down producing gentle wines of each colour. This pure Sauvignon is a great but unpretentious wine without the “Tom Cat” style popular in New Zealand. About the Wine

Domaine de Vaux Saint-Georges is a 19th century chateau in the village of Thésée, where Guy and Cédric Allion of Domaine du Vaux St. Georges have their 28 hecatre vineyards on the well-exposed slopes of the river Cher’s north bank in the Loire Valley’s Touraine Appellation.

The soils are clay based with some flints, known as Perruches in the area, and a chalky subsoil allowing for good natural drainage. These flint deposits give their wines their trademark crisp minerality.

The grapes are picked at night and low temperature and the wine is fermented on its own yeast for a month before resting on its lees until the next spring. It’s these traditional techniques that make this such a crisp, intense Sauvignon.

Goes well with

Works well as an aperitif before a meal, or will go well with raw oysters, other shellfish and lighter (non smoked) fish dishes. Especially good with brie and goats cheese.
