Cuvée de Silex, 2017
Domaine des Aubuisieres
Taste Profile Where it's from
Chenin Blanc is one of the most under-rated white grape varieties and the best examples come from the beautiful Loire valley. Here, the top Chenin vines ripen on limestone soils, with rich, intense flavours of ripe green apples, honey and a lingering acidic finish. Chenin is highly adaptable and works very well with different levels of sweetness – this wine is both dry and full-bodied, and the 2017 vintage is excellent. - Andy Howard MW
About the Wine
The talented winemaker Bernard Fouquet is a fortunate man as he has 26 hectares of Chenin Blanc vineyards planted on the best soils in Vouvray (clay/limestone) – Le Marigny, Le Bouchet, Le Plan de Jean and Le Clos de l’Auberdière.
He works with a lutte raisonnée philosophy, practitioners of which like to think of as the thinking man’s answer to organic, using treatments only when necessary.
For sometime now he has been moving the quality of his wines into the region where he can credibly challenge the worlds finest practitioners of white wine but at an absolutely unbeatable price/quality point.
His wine Cuvée de Silex in a fine example of this, exhibiting all the wonderful mineral character as well as the honeyed fruit that is the characteristic of Chenin Blanc.
Works well with
Chenin Blanc is very versatile when it comes to food matches. Fish and cheese are two of the most classic foods in this area of France so it’s no surprise that Cuvee de Silex goes really well with poached or roasted fish.
Try it with monkfish, bream or bass. There is a distinct mineral feel to this wine, which also goes beautifully with a grilled goats cheese salad.
