Grillo is the iconic varietal of Sicily, mainly grown on Sicily's Southern vineyards facing Africa. This organic wine is a mid-gold colour, ultra-fresh and clean with a floral nose of white flowers. Unlike some wines grown this far South that have a tendency to be flabby, the palate is well balanced and very attractive with the underlying acidity well rounded by the fruitiness. - John Brownsdon
About the Wine
Established in 1970, Colomba Bianca Cantine is the largest Sicilian grower cooperative and the biggest Italian producer of organic wine, with more than 1,800 hectares dedicated to organically farmed vines.
Despite their size, they engage a philosophy of micro-viticulture and micro-winemaking to ensure the ultimate precision, quality and expression of terroir.
The extensive range of single variety and innovative blends are tailor made under the watchful eye of head winemaker Mattia Filippi, and this early drinking Grillo is an excellent example of what can be achieved with the right focus.
Goes well with
This wine will drink very well with some strong flavoured Mediterranean fish dishes, fish pastas, delicate risottos, and white meats. However it will also work as a super aperitif wine, marrying well with olives and similar flavours. Serve at 10-12°C
